This decadent mussel dish, featuring the traditional French flavours of white wine, butter and garlic will be sure to delight your dinner guests.
Method
In a large pot add the butter with a touch of olive oil on a medium to low heat.
Once melted add the shallots and cook for a few minutes until softened. Add the garlic and cook for a further minute.
Add mussels and wine. Bring to the boil and then reduce the heat to simmer. Cook for five or so minutes until the mussels open.
Garnish with finely chopped dill, lemon zest and juice and adjust the seasoning with salt and pepper.
