A simple and delicious way to serve Yumbah’s new lightly cooked abalone, an ideal dish for entertaining.
Method
Step 1: Bring a large pot of salted water to a boil.
Step 2: Add the pasta and cook, stirring occasionally, until al dente.
Step 3: While the pasta is cooking, place a large pan over medium heat.
Step 4: Add the butter to the pan.
Step 5: Once the butter is melted, add garlic and cook until fragrant (about 30 seconds to 1 minute).
Step 6: When the pasta is cooked, drain the pasta and set aside.
Step 7: Pour in the wine and bring to a simmer for 2 minutes or until wine reduces by half.
Step 8: Add cream and allow to simmer until slightly thickened.
Step 9: Remove pan from the heat.
Step 10: Slice the abalone thinly and add to the pan to warm through along with the lemon juice and cooked pasta.
Step 11: Garnish with parsley and serve.
